KITTY MORSE INTRODUCES MOROCCAN CUISINE

Join us at the Fallbrook Library, located at 124 S. Mission Road, on July 11 at 6 p.m. for this "delicious" new part of the Friends of the Fallbrook Library Lecture Series. Kitty Morse, a veteran food writer, is the author of five cookbooks on the cuisine of Morocco, with her latest, Mint Tea and Minarets, published this year. Moroccan food favors healthy, seasonal produce, proteins and breads from local markets. Familiar herbs and spices – cilantro, parsley, cumin, cinnamon, ginger, allspice and nutmeg – are used to flavor the foods.

The national drink is mint tea (green tea infused with fresh mint sprigs) and the main dish is tagine, named for the dome-shaped clay casserole dishes used to slow cook a mélange of vegetables, bits of meat, seafood or dried fruit in a saffron-dusted broth.

Mrs. Morse immigrated at age 17 to the U.S. in Milwaukee, after having been born in Casablanca and living in North Africa during the French Protectorate times. She discovered a passion for cooking in college. Without formal training, she learned to re-create the dishes she grew up on (though tagine dishes were impossible to find and couscous had to be shipped from New York).
